Ingredients

Matcha Pudding

  • 2 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1-2 tsp matcha powder
  • ½ cup chia seeds

Strawberry Compote

  • 2 cups ripe strawberries
  • 2 tsp lemon juice
  • 2 tsp maple syrup

Instructions

  1. Mix dairy-free milk, maple syrup, vanilla, and matcha in a bowl and whisk until combined.
  2. Add chia seeds and mix well, then let sit for 5-10 minutes.
  3. Cover and refrigerate for 45-60 minutes until thick.
  4. For the compote, heat strawberries, lemon juice, and maple syrup in a saucepan.
  5. Muddle the strawberries while cooking for 10-12 minutes until saucy.
  6. Cool the compote, then serve it over the chia pudding.
