Instructions
- Mix dairy-free milk, maple syrup, vanilla, and matcha in a bowl and whisk until combined.
- Add chia seeds and mix well, then let sit for 5-10 minutes.
- Cover and refrigerate for 45-60 minutes until thick.
- For the compote, heat strawberries, lemon juice, and maple syrup in a saucepan.
- Muddle the strawberries while cooking for 10-12 minutes until saucy.
- Cool the compote, then serve it over the chia pudding.
