Perfect Naan

plain yogurt
Instructions
- Mix flour, baking powder, and salt together.
- Stir in yogurt until the dough is too stiff for a spoon, then knead until smooth and elastic.
- Form the dough into a ball and place it in an oiled bowl, covering it with a towel to rest for at least an hour.
- Cut the dough into 10 equal pieces and form each into a ball, then flatten into discs.
- Heat a frying pan or griddle and preheat the oven to about 500°F.
- Roll out each piece of dough to about 8-10 inches across and less than ¼ inch thick.
- Cook each naan on the hot griddle for 4-5 minutes until it puffs up and has brown spots.
- Transfer the naan to the oven for a minute or two until it puffs up and lightly colors on top.
- Remove from the oven and brush with melted butter if desired, then stack in a napkin-lined basket.
