Homemade Naan

Ingredients

The dough

  • 3 Tbsp warm water
  • 1 ½ tsp active dry yeast
  • 1 Tbsp granulated sugar
  • ¼ tsp granulated sugar
  • ½ cup whole milk
  • cup plain yogurt
  • 2 Tbsp olive oil
  • 1 large egg yolk
  • 1 tsp salt
  • 2 ¼ cups unbleached all-purpose flour

For finishing

  • 2 Tbsp butter

Instructions

  1. Proof the yeast by whisking together warm water, yeast, and ¼ tsp sugar, then let it rest until frothy.
  2. Mix in the milk, yogurt, olive oil, egg yolk, remaining sugar, and salt, then stir in about ⅔ of the flour.
  3. Knead in the remaining flour until the dough pulls away from the sides and is slightly sticky.
  4. Transfer the dough to a lightly oiled bowl, cover it, and let it rest until doubled in volume.
  5. Punch down the dough and divide it into 6 equal portions, rounding out the edges.
  6. Preheat a cast iron skillet over medium-high heat.
  7. Roll each piece of dough into a 9-inch oval shape, dotting the top with water.
  8. Cook the naan moistened side down until golden brown, then flip and cook the other side.
  9. Repeat the process with the remaining dough, adjusting heat as necessary.
  10. Brush the naan with melted butter before serving.
