Whole Wheat Naan

Instructions
- Sprinkle yeast over warm milk and let it sit for about 10 minutes.
- In a large bowl, whisk together the flours, baking powder, baking soda, and salt.
- Make a well in the center of the flour mixture and add the oil, honey, and yogurt, then mix lightly.
- Pour in the milk-yeast mixture and mix until a soft but not sticky dough forms.
- Knead the dough for about 7 minutes, adding flour if necessary, then let it rest for 2 hours.
- After resting, divide the dough into 6 equal pieces and roll each piece out on a floured surface.
- Heat a cast iron skillet on medium-high heat and add a little ghee.
- Place a rolled-out naan in the skillet, cover with a lid, and cook for 1-2 minutes until it bubbles.
- Flip the naan and cook for another minute.
- Remove from heat and repeat with the remaining dough, brushing each naan with ghee before serving.
