Ingredients

The dough

  • 2 ½ cup white whole wheat flour
  • ½ cup all-purpose flour
  • 1 teaspoon honey
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon sea salt
  • ½ cup whole milk yogurt
  • 1 teaspoon olive oil
  • ½ cup milk
  • 1 ¼ ounce packet of yeast

For frying and serving

  • 1 tablespoon ghee

Instructions

  1. Sprinkle yeast over warm milk and let it sit for about 10 minutes.
  2. In a large bowl, whisk together the flours, baking powder, baking soda, and salt.
  3. Make a well in the center of the flour mixture and add the oil, honey, and yogurt, then mix lightly.
  4. Pour in the milk-yeast mixture and mix until a soft but not sticky dough forms.
  5. Knead the dough for about 7 minutes, adding flour if necessary, then let it rest for 2 hours.
  6. After resting, divide the dough into 6 equal pieces and roll each piece out on a floured surface.
  7. Heat a cast iron skillet on medium-high heat and add a little ghee.
  8. Place a rolled-out naan in the skillet, cover with a lid, and cook for 1-2 minutes until it bubbles.
  9. Flip the naan and cook for another minute.
  10. Remove from heat and repeat with the remaining dough, brushing each naan with ghee before serving.
