Vegan Lettuce Wraps with Sweet Sriracha

Instructions
- Soak the walnuts in hot water for about 10 minutes, then drain.
- In a food processor, add the walnuts and all the other walnut meat ingredients. Pulse until the walnuts resemble a mince.
- Add in the Sriracha sauce ingredients and pulse to incorporate.
- On a lettuce leaf, add some walnut meat mixture and top with shredded carrots, bell pepper slices, sesame seeds, and scallions.
