Vegan Lettuce Wraps with Sweet Sriracha

Ingredients

Walnut Meat

  • 1 cup raw walnuts
  • 2 teaspoons liquid aminos
  • ½ teaspoon ginger
  • 1 tablespoon olive oil
  • 1 clove garlic

Sriracha Sauce

  • ½ tablespoon sriracha
  • 2 tablespoons maple syrup
  • ¼ teaspoon sesame seeds

Wraps

  • 3 leaves curly lettuce
  • 1 small carrot
  • ¼ piece red bell pepper
  • a pinch sesame seeds
  • 1 stalk scallion

Instructions

  1. Soak the walnuts in hot water for about 10 minutes, then drain.
  2. In a food processor, add the walnuts and all the other walnut meat ingredients. Pulse until the walnuts resemble a mince.
  3. Add in the Sriracha sauce ingredients and pulse to incorporate.
  4. On a lettuce leaf, add some walnut meat mixture and top with shredded carrots, bell pepper slices, sesame seeds, and scallions.
