Crispiest Air Fryer Chicken Wings

Ingredients

The chicken wings

  • 2 lb. chicken wings, flats and drumettes separated

The coating

  • tsp. baking powder
  • tsp. cornstarch
  • tsp. Diamond Crystal kosher salt or 1 tsp. Morton kosher salt
  • 1 tsp. freshly ground pepper
  • 1 tsp. garlic salt
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • 2 Tbsp. extra-virgin olive oil
  • 2 Tbsp. mild hot sauce (preferably Frank’s RedHot)

For serving

  • to taste store-bought or homemade ranch dressing or blue cheese dressing

Instructions

  1. Pat dry the chicken wings with paper towels and coat with baking powder and cornstarch. Chill for 1 hour.
  2. Spray the air-fryer basket with oil and preheat to 400°F. Mix the salt, pepper, garlic salt, onion powder, and smoked paprika in a bowl.
  3. Transfer wings to a bowl, add the spice mixture, olive oil, and hot sauce, and toss to coat.
  4. Cook the wings in batches in the air fryer for 25-30 minutes, turning halfway through until golden brown and crisp.
  5. Let the wings rest for 5 minutes before serving with ranch or blue cheese dressing.
