Soft Mini Mandazi

Instructions
- Combine warm water, evaporated milk, salt, sugar, and yeast in a large bowl and let sit for 5 minutes.
- Add the egg and mix well.
- Gradually add 3½ cups of flour, cardamom, nutmeg, and grated coconut, mixing by hand or with a stand mixer.
- Knead the dough on a floured surface until smooth, adding more flour if necessary.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 to 2 hours until doubled in size.
- Roll out the dough to 1 inch thick and cut into bite-sized pieces.
- Heat vegetable oil in a saucepan to 350°F (175°C).
- Fry the pieces until golden brown, about 3-5 minutes, then drain on paper towels.
- Serve warm, sprinkled with powdered sugar or cinnamon sugar.
