Ingredients

The dough

  • ½ cup warm water
  • 2 teaspoons active dry yeast
  • 5 ounces evaporated milk or ¾ cup canned coconut milk
  • 1 large egg
  • ½ cup sugar
  • 1 teaspoon salt
  • 3½ - 4 cups all-purpose flour
  • ¼ cup grated coconut or coconut flakes
  • 1 teaspoon crushed cardamom spice
  • 1 teaspoon grated nutmeg or cinnamon

For frying and serving

  • to taste powdered sugar or cinnamon sugar
  • as needed for deep frying vegetable oil

Instructions

  1. Combine warm water, evaporated milk, salt, sugar, and yeast in a large bowl and let sit for 5 minutes.
  2. Add the egg and mix well.
  3. Gradually add 3½ cups of flour, cardamom, nutmeg, and grated coconut, mixing by hand or with a stand mixer.
  4. Knead the dough on a floured surface until smooth, adding more flour if necessary.
  5. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 to 2 hours until doubled in size.
  6. Roll out the dough to 1 inch thick and cut into bite-sized pieces.
  7. Heat vegetable oil in a saucepan to 350°F (175°C).
  8. Fry the pieces until golden brown, about 3-5 minutes, then drain on paper towels.
  9. Serve warm, sprinkled with powdered sugar or cinnamon sugar.
