Mandazi (East African Doughnuts)

Instructions
- Combine warm water, coconut milk, salt, sugar, and yeast in a large bowl and let sit for 5 minutes.
- Add the egg to the mixture.
- Incorporate 3 cups of flour, cardamom, nutmeg, and grated coconut, mixing by hand or with a stand mixer.
- Knead the dough on a floured surface for 5 to 7 minutes until smooth and not sticky, adding more flour as needed.
- Place the dough in a greased bowl, cover with a cloth, and let rise in a warm place for 1 to 2 hours until doubled.
- Punch down the dough, divide it into 4 pieces, and roll each piece into 6 triangular shapes. Let rest for 15 minutes.
- Heat vegetable oil in a large saucepan to 375 degrees Fahrenheit.
- Fry the mandazi in batches until golden brown on both sides, then remove and drain on napkins.
- Optionally, sprinkle with powdered sugar before serving.
