Mandazi (East African Doughnuts)

Ingredients

The dough

  • ¼ cup warm water
  • 2 teaspoon active dry yeast
  • ½ cup canned coconut milk
  • 1 large egg
  • ¼ - ½ cup sugar
  • 1 teaspoon salt
  • 3 cups all purpose flour
  • ¼ cup additional all purpose flour
  • 3 tablespoons freshly ground coconut or coconut flakes
  • 1 teaspoon crushed cardamom spice
  • ½ teaspoon grated nutmeg or cinnamon

For frying

  • as needed none vegetable oil

Instructions

  1. Combine warm water, coconut milk, salt, sugar, and yeast in a large bowl and let sit for 5 minutes.
  2. Add the egg to the mixture.
  3. Incorporate 3 cups of flour, cardamom, nutmeg, and grated coconut, mixing by hand or with a stand mixer.
  4. Knead the dough on a floured surface for 5 to 7 minutes until smooth and not sticky, adding more flour as needed.
  5. Place the dough in a greased bowl, cover with a cloth, and let rise in a warm place for 1 to 2 hours until doubled.
  6. Punch down the dough, divide it into 4 pieces, and roll each piece into 6 triangular shapes. Let rest for 15 minutes.
  7. Heat vegetable oil in a large saucepan to 375 degrees Fahrenheit.
  8. Fry the mandazi in batches until golden brown on both sides, then remove and drain on napkins.
  9. Optionally, sprinkle with powdered sugar before serving.
