Ingredients

The cookie dough

  • cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • teaspoon salt
  • ¾ cup unsalted butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract

For decorating

  • to taste Royal Icing or Easy Glaze Icing
  • to taste assorted sprinkles

Instructions

  1. Whisk together flour, cocoa powder, baking powder, and salt in a medium bowl.
  2. In a large bowl, beat the butter and sugar until smooth, then add the egg and vanilla and mix until combined.
  3. Add the dry ingredients to the wet ingredients and mix until combined. If dough is too soft, add more flour.
  4. Divide the dough into two halves and roll each half out to ¼-inch thickness on parchment paper dusted with cocoa powder.
  5. Chill the rolled-out dough for at least 1-2 hours.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Cut the chilled dough into shapes using cookie cutters and place on baking sheets.
  8. Bake for 11-12 minutes until edges are set, then cool on a wire rack.
  9. Prepare icing and decorate the cooled cookies as desired.
