Instructions
- Prepare the cookie dough by whisking together the flour, cocoa powder, baking powder, and salt.
- In a separate bowl, beat the butter and sugar until smooth, then add the egg and vanilla.
- Combine the wet and dry ingredients to form a soft dough, adding more flour if necessary.
- Divide the dough in half, roll it out to ¼-inch thickness, and chill for 1-2 hours.
- Preheat the oven to 350°F (177°C) and cut the chilled dough into shapes using cookie cutters.
- Bake the cookies for 11-12 minutes until the edges are set, then cool on a wire rack.
- Prepare the icing and tint it with gel food coloring if desired.
- Decorate the cooled cookies with icing and let them set.
