Ingredients

The dough

  • 2 cups all-purpose flour
  • ¾ cup natural, unsweetened or Dutch-process cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups granulated sugar
  • 1 ¼ cups salted butter, softened to room temperature
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

For rolling

  • as needed granulated sugar

Instructions

  1. Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl.
  2. In a stand mixer, combine granulated sugar and butter, mixing until light and fluffy.
  3. Add eggs and vanilla, mixing until well combined.
  4. Gradually add the flour mixture and mix until combined.
  5. Scoop dough into 2 tablespoon-sized mounds and chill for about an hour.
  6. Preheat the oven to 350°F and prepare baking sheets.
  7. Roll each dough ball in granulated sugar and place on baking sheets.
  8. Bake for 9-10 minutes for soft cookies or 12-13 minutes for crispy cookies.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
