Ingredients

  • 1 large head roasted garlic
  • 2 tbsp olive oil
  • to taste salt
  • to taste pepper
  • 1 large portobello mushroom
  • 3 cups kale leaves
  • 1 prepared pizza crust
  • 1 cup fontina or mozzarella cheese

Instructions

  1. Preheat the oven according to the pizza crust package instructions or to 450°F if using dough.
  2. Remove roasted garlic cloves from their skins and mash them with 1 tablespoon of olive oil, seasoning with salt and pepper.
  3. Heat the remaining olive oil in a skillet over medium-high heat, add mushroom slices, and cook until softened.
  4. Add kale to the skillet and cook until wilted, then season with salt and pepper.
  5. Place the pizza crust on parchment paper and spread the roasted garlic sauce on top, leaving a 1-inch edge.
  6. Layer half of the cheese, followed by the mushrooms and kale, then add the remaining cheese.
  7. Transfer the pizza to the pizza stone or baking sheet and bake until the crust is golden brown and the kale is crisp.
