Ingredients

The shrimp

  • 1 lb raw large shrimp, tail on and deveined

The seasoning and coating

  • 2 teaspoons kosher salt, separated
  • ½ teaspoon ground black pepper
  • ½ teaspoon paprika
  • 1 tablespoon fresh lemon juice
  • ¾ cup panko crumbs
  • ½ cup shredded parmesan cheese or pecorino romano
  • 2 large eggs

Instructions

  1. Rinse and pat dry the shrimp, then marinate with salt, pepper, paprika, and lemon juice for 15 minutes.
  2. Mix panko crumbs, cheese, and salt in one bowl, and whisk the eggs in another bowl.
  3. Preheat the air fryer to 400ºF.
  4. Dredge each shrimp in the egg wash, then coat with the panko mixture, repeating the process for a second layer.
  5. Drizzle olive oil in the air fryer and arrange the shrimp without touching each other.
  6. Air fry the shrimp for 2 minutes, flip, and cook for another 2 minutes until golden brown.
  7. Serve with lemon, marinara sauce, or on a salad.
