Ingredients

The eggs

  • 6 eggs large, pastured eggs

The water and additives

  • 1 inch cold water (enough to cover the eggs)
  • ½ teaspoon baking soda

Instructions

  1. Poke a hole in the bottom end of each egg using a pin or thumbtack.
  2. Place the eggs in a medium saucepan and fill it with cold water, ensuring the eggs are in a single layer and submerged by at least 1 inch.
  3. Add ½ teaspoon of baking soda for every 3 cups of water.
  4. Bring the water to a boil over high heat and set a timer for 1 minute once boiling.
  5. After 1 minute, remove the pot from heat, cover it, and let the eggs sit in the hot water for 10 minutes.
  6. Prepare a bowl of ice water while waiting.
  7. Transfer the eggs to the bowl of ice water and submerge them for 5 minutes.
  8. Crack the shells gently against a hard surface and peel starting from the bottom end.
