Ingredients

  • 4 cups gluten-free flour or white whole wheat flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 5 units eggs
  • 3 ½ cups milk
  • 1 cup melted coconut oil
  • 1 tablespoon vanilla extract

Instructions

  1. Mix the flour, baking powder, and salt in a small bowl.
  2. In a large bowl, combine the eggs, milk, coconut oil, and vanilla extract.
  3. Add the dry ingredients to the wet ingredients and stir until just combined.
  4. Scoop a ladle of batter onto a hot waffle iron and cook until light brown.
  5. Repeat the process with the remaining batter.
  6. Place cooked waffles on a cooling rack.
  7. Once cooled, transfer waffles to a freezer bag, placing wax paper between every two waffles.
  8. To serve, toast the frozen waffles until crisp.
