Ingredients

The pudding

  • 1 ¾ cups unsweetened almond milk
  • ¼ cup canned light coconut milk
  • 1 to 2 tablespoons maple syrup
  • ¾ to 1 teaspoon ground turmeric
  • ¾ teaspoon ground cinnamon
  • a pinch black pepper
  • ⅓ to ½ cup chia seeds

Toppings

  • toasted coconut
  • chopped fruit
  • chopped nuts or seeds

Instructions

  1. Blend almond milk, coconut milk, maple syrup, turmeric, cinnamon, and black pepper until smooth.
  2. Pour the mixture into a bowl and whisk in the chia seeds.
  3. Let the mixture rest for 5 minutes and then whisk again.
  4. Cover and refrigerate overnight.
  5. Stir well before serving and add desired toppings.
