Ingredients

The pudding

  • 1 cup almond milk
  • cup chia seeds
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt

Toppings

  • ½ banana sliced
  • cup mango
  • 1 tablespoon unsweetened coconut
  • 1 tablespoon hemp seeds
  • 1 tablespoon pistachios
  • 1 tablespoon almond butter
  • 2 ounces dark chocolate

Instructions

  1. Whisk together the coconut milk, almond milk, chia seeds, honey, vanilla, and salt in a bowl.
  2. Cover the mixture and refrigerate for two hours or overnight.
  3. Spoon the pudding into bowls or glasses the next morning.
  4. Top with sliced bananas, chopped mango, toasted coconut, hemp seeds, and chopped pistachios.
  5. Sprinkle with chopped dark chocolate and drizzle with melted almond butter if desired.
