Coconut Chia Pudding

Instructions
- Combine coconut milk, cold water, honey, vanilla extract, and cinnamon in a large measuring cup or bowl.
- Blend the mixture until smooth.
- Stir in chia seeds until well combined.
- Let the mixture sit for at least 30 minutes to allow chia seeds to absorb liquid.
- Stir again to check thickness.
- Cover and refrigerate overnight or for at least 4 hours until firm.
- When ready to serve, layer chia pudding with fresh fruit and top with toasted coconut flakes.
