Ingredients

The pudding

  • 1 can (13.5 ounce) full-fat coconut milk
  • 2.5 ounces cold water
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ cup chia seeds

Optional garnishes

  • to taste diced fresh fruit
  • to taste toasted coconut flakes
  • to taste toasted nuts

Instructions

  1. Combine coconut milk, cold water, honey, vanilla extract, and cinnamon in a large measuring cup or bowl.
  2. Blend the mixture until smooth.
  3. Stir in chia seeds until well combined.
  4. Let the mixture sit for at least 30 minutes to allow chia seeds to absorb liquid.
  5. Stir again to check thickness.
  6. Cover and refrigerate overnight or for at least 4 hours until firm.
  7. When ready to serve, layer chia pudding with fresh fruit and top with toasted coconut flakes.
