Ingredients

The main ingredients

  • 1.65 lb sirloin steak, sliced into ½-inch thick strips
  • 1 each red bell pepper, sliced
  • 1 each yellow bell pepper, sliced
  • 1 each orange bell pepper, sliced
  • 1 medium onion, cut in half and sliced lengthwise
  • 1 pint button mushrooms, sliced
  • 3 tbsp chopped fresh cilantro
  • 3 tbsp avocado oil
  • 1 tsp fresh lemon juice

The spice mix

  • 1 tbsp ground cumin
  • 1 tbsp garlic powder
  • 1 tsp chili powder
  • 1 tsp chipotle powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp ground black pepper
  • ½ tsp ground coriander

For serving

  • as needed flour tortillas
  • as needed sour cream
  • as needed diced tomatoes
  • as needed diced avocado
  • as needed lime or lemon wedges
  • as needed chopped cilantro

Instructions

  1. Preheat the oven to broil and place a rack in the upper position.
  2. In a large bowl, combine beef strips, bell peppers, onions, mushrooms, cilantro, avocado oil, and lemon juice.
  3. In a small bowl, mix together the spice mix ingredients and add to the meat and veggies; toss well to coat.
  4. Spread the mixture in an even layer on a baking sheet and place under the broiler for 4 to 5 minutes, checking regularly.
  5. Remove from the oven, toss gently, and garnish with lemon or lime wedges, diced tomatoes, diced avocado, cilantro, and sour cream as desired.
  6. Serve with flour tortillas and additional garnishes if desired.
