Chinese Chicken Salad

scallions, thinly sliced on the bias

cilantro leaves, roughly chopped

canned mandarin oranges in 100% juice, drained

toasted almond slivers

The dressing

All-Purpose Stir-Fry Sauce

avocado oil (optional)
The protein

Cracklin’ Chicken, cut into slices
Instructions
- Prepare the Cracklin’ Chicken and set it aside.
- In a bowl, whisk together the All-Purpose Stir-Fry Sauce and avocado oil, if using.
- In a large bowl, combine the Napa cabbage, red cabbage, carrots, scallions, and cilantro.
- Pour most of the dressing over the salad and toss well, adjusting seasoning as needed.
- Transfer the dressed salad to a serving platter and add the mandarin oranges on top.
- Place the Cracklin’ Chicken on top of the salad.
- Sprinkle toasted almonds and sesame seeds on top before serving.
