Chinese Chicken Salad

Ingredients

The salad

  • ½ head small Napa cabbage, cored and sliced thin
  • ½ head small red cabbage, cored and sliced thin
  • 2 medium carrots, peeled and julienned
  • 3 stalks scallions, thinly sliced on the bias
  • ½ cup cilantro leaves, roughly chopped
  • ½ cup canned mandarin oranges in 100% juice, drained
  • ¼ cup toasted almond slivers
  • 2 tablespoons toasted sesame seeds

The dressing

  • ½ cup All-Purpose Stir-Fry Sauce
  • 2 tablespoons avocado oil (optional)

The protein

  • 6 pieces Cracklin’ Chicken, cut into slices

Instructions

  1. Prepare the Cracklin’ Chicken and set it aside.
  2. In a bowl, whisk together the All-Purpose Stir-Fry Sauce and avocado oil, if using.
  3. In a large bowl, combine the Napa cabbage, red cabbage, carrots, scallions, and cilantro.
  4. Pour most of the dressing over the salad and toss well, adjusting seasoning as needed.
  5. Transfer the dressed salad to a serving platter and add the mandarin oranges on top.
  6. Place the Cracklin’ Chicken on top of the salad.
  7. Sprinkle toasted almonds and sesame seeds on top before serving.
