Ingredients

The hazelnuts

  • 1 pound raw hazelnuts

The seasoning

  • ½-1 tsp ground cinnamon
  • ½ tsp sea salt
  • 2-3 tsp coconut sugar (optional)

Instructions

  1. Preheat the oven to 350°F (176°C) and spread hazelnuts on a baking sheet in a single layer.
  2. Roast the hazelnuts for 12-15 minutes until fragrant and golden brown.
  3. Remove from the oven and cool slightly, then rub the hazelnuts in a kitchen towel to remove most of the skins.
  4. Transfer the hazelnuts to a food processor or high-speed blender and blend on low for 7-9 minutes until a butter forms, scraping down the sides as needed.
  5. Once creamy, add ground cinnamon, sea salt, and coconut sugar (if using) and blend again until well incorporated.
  6. Taste and adjust seasonings as needed, then transfer the hazelnut butter to a clean jar.
