  • 3 cups unskinned hazelnuts

The seasoning and flavoring

  • 1 tablespoon unsalted butter
  • ¼ teaspoon fine ground sea salt
  • 1 tablespoon thyme leaves, fresh
  • ½ unit orange zest
  • 1 unit lemon zest

Instructions

  1. Preheat the oven to 375°F (190°C) and place the hazelnuts in a single layer on a rimmed baking sheet.
  2. Toast the hazelnuts for about 15 minutes until fragrant and the skins darken.
  3. In a large skillet over medium-high heat, warm the butter until it becomes toasted and fragrant.
  4. Add the salt and then the toasted hazelnuts to the skillet, stirring to coat them in butter.
  5. Stir in the fresh thyme and sauté for about a minute.
  6. Finish by adding the orange and lemon zests, reserving some zest for garnish if desired.
  7. Remove from heat, taste, and adjust salt if necessary. Serve warm or at room temperature.
