Breakfast Meatloaf

Ingredients

Meat and Eggs

  • 1 lb ground beef
  • 1 lb ground sausage
  • 2 eggs eggs

Vegetables and Herbs

  • 3 slices bacon, diced
  • 3 cloves garlic, peeled
  • ½ medium onion
  • 2 cups mushrooms
  • 1 tbsp fresh sage
  • 1 tbsp fresh rosemary

Seasonings

  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. 1. Dice the bacon and cook it in a skillet over medium heat until crispy, then remove and drain on paper towels.
  2. 2. Preheat the oven to 400°F and grease an 8x8 baking dish.
  3. 3. In a food processor, chop the garlic, onion, mushrooms, sage, and rosemary until finely diced.
  4. 4. In a bowl, combine the ground beef, ground sausage, eggs, chopped vegetables, salt, pepper, and cooked bacon, mixing well.
  5. 5. Transfer the meatloaf mixture to the baking dish and spread it evenly.
  6. 6. Bake in the oven for 1 hour, then let it cool for at least 5 minutes before serving.
