Ingredients

Dough

  • 1 cup water
  • 2 teaspoons active dry yeast
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 3 cups whole-wheat flour

Filling

  • 1 ¼ cups ricotta cheese
  • 1 ¼ cups mozzarella cheese (shredded)
  • ½ cup parmesan cheese (shredded)
  • to taste salt
  • to taste pepper
  • pizza sauce
  • sesame seeds (raw, optional)

  • 4 oz sausage
  • mushrooms
  • ½ green bell pepper
  • onion
  • garlic
  • figs
  • zucchini

Instructions

  1. Preheat the oven to 425°F.
  2. Heat 1 cup of water until warm, then add the yeast and let it rest for a minute.
  3. Add salt and olive oil to the water mixture and stir if necessary.
  4. In a food processor or mixer, combine 3 cups of flour and pour in the water mixture to form a dough ball.
  5. Coat a large bowl with olive oil, place the dough ball in it, and cover with plastic wrap while preparing the fillings.
  6. In another bowl, mix ricotta, mozzarella, and Parmesan cheeses, and prepare any additional fillings.
  7. Let the dough rise for 20-30 minutes, or refrigerate it for later use.
  8. Divide the dough into 6 pieces, shape into balls, and flatten each with a rolling pin.
  9. Spread pizza sauce in the center of each dough piece, add cheese mixture and any desired fillings.
  10. Seal the edges of the dough and place seam side down on a greased baking sheet.
  11. Make holes in the top of each pocket and sprinkle with sesame seeds if desired.
  12. Bake for 12-15 minutes, let cool for a few minutes, and serve with warm pizza sauce.
