Whole-Wheat Pizza Pockets

Instructions
- Preheat the oven to 425°F.
- Heat 1 cup of water until warm, then add the yeast and let it rest for a minute.
- Add salt and olive oil to the water mixture and stir if necessary.
- In a food processor or mixer, combine 3 cups of flour and pour in the water mixture to form a dough ball.
- Coat a large bowl with olive oil, place the dough ball in it, and cover with plastic wrap while preparing the fillings.
- In another bowl, mix ricotta, mozzarella, and Parmesan cheeses, and prepare any additional fillings.
- Let the dough rise for 20-30 minutes, or refrigerate it for later use.
- Divide the dough into 6 pieces, shape into balls, and flatten each with a rolling pin.
- Spread pizza sauce in the center of each dough piece, add cheese mixture and any desired fillings.
- Seal the edges of the dough and place seam side down on a greased baking sheet.
- Make holes in the top of each pocket and sprinkle with sesame seeds if desired.
- Bake for 12-15 minutes, let cool for a few minutes, and serve with warm pizza sauce.
