Ingredients

The dough

  • 2 teaspoons active dry yeast
  • 1 cup warm water
  • 1 teaspoon honey
  • 3 cups whole-wheat flour
  • 2 teaspoons salt
  • 2 tablespoons olive oil

The filling

  • 2 tablespoons olive oil
  • 2 shallots peeled and thinly sliced
  • 1 red bell pepper cored, seeded, and cut into small dice
  • 4 ounces mushrooms
  • ½ pound ground Italian sausage
  • 2 cups pizza sauce
  • 8 ounces freshly grated mozzarella cheese
  • ½ cup freshly grated parmesan cheese

Instructions

  1. Activate the yeast by sprinkling it into warm water with honey and let it foam.
  2. Mix flour and salt in a food processor, then add the yeast mixture and form a dough.
  3. Let the dough rise in a greased bowl or bag for 1 to 2 hours.
  4. Preheat the oven to 400°F.
  5. Sauté shallots, peppers, and mushrooms in olive oil until softened, then add and cook the sausage until browned.
  6. Roll out the dough into a rectangle and spread pizza sauce over it.
  7. Sprinkle both cheeses and cooked toppings over the sauce.
  8. Roll the dough tightly and slice into 1-inch pieces.
  9. Place rolls on a baking sheet and let rise for another 30 minutes.
  10. Bake until golden brown for 10 to 15 minutes and serve with warm pizza sauce.
