Lemon Basil Grilled Asparagus with Parmesan & Walnuts

Ingredients

The asparagus

  • 1 bunch asparagus

The dressing

  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon lemon juice
  • ½ teaspoon Dijon mustard
  • teaspoon salt
  • teaspoon freshly ground black pepper

The toppings

  • 2 tablespoons chopped walnuts
  • 1 tablespoon lemon zest strips
  • 3 tablespoons thinly shaved Parmesan cheese
  • 4 leaves fresh basil

Instructions

  1. Preheat the grill to medium heat.
  2. Trim the asparagus and place it on a plate.
  3. Whisk together olive oil, lemon juice, mustard, salt, and pepper, then drizzle over the asparagus and toss to coat.
  4. Shape foil into shallow dishes for walnuts and lemon zest.
  5. Place asparagus on the grill with tips facing away from heat, and place walnuts and lemon zest on the cooler side.
  6. Close the grill lid and cook for 4 minutes until asparagus has grill marks.
  7. Turn the asparagus, stir the lemon zest, and remove the walnuts to let them cool.
  8. Cook the asparagus and lemon zest for an additional 2 minutes, then remove from the grill.
  9. Sprinkle asparagus with lemon zest, walnuts, Parmesan, and basil before serving.
