Ingredients

Cookie Cups

  • 12 pieces dates, pitted
  • ¼ cup milk of choice
  • ½ teaspoon vanilla extract
  • 3 cups oat flour
  • 1 cup almond flour
  • 1 tablespoon cinnamon
  • 1 teaspoon cinnamon
  • ¼ teaspoon allspice
  • teaspoon salt
  • 2 tablespoons coconut oil
  • 1 tablespoon molasses
  • 1 teaspoon molasses
  • 1 tablespoon agave

Apple Filling

  • 3 medium apples, chopped
  • ½ cup unsweetened applesauce
  • ¼ cup milk of choice
  • 1 tablespoon molasses
  • 1 teaspoon cinnamon
  • ½ teaspoon lemon juice
  • 1 pinch salt
  • 2 tablespoons granulated sweetener of choice (optional)

Instructions

  1. Preheat the oven to 350°F and spray a muffin tin with cooking spray.
  2. In a food processor, combine dates, milk, and vanilla extract. Soak dates in warm water if they are dry.
  3. In a bowl, whisk together oat flour, almond flour, cinnamon, allspice, and salt.
  4. In another bowl, mix the date paste, coconut oil, molasses, and agave.
  5. Combine the date mixture with the dry ingredients until it resembles wet sand.
  6. Scoop the dough into the muffin tin, pressing it up the sides and bottom firmly.
  7. Bake for 12 minutes until the edges are brown, then cool in the tin.
  8. For the filling, chop apples and combine with applesauce, milk, molasses, cinnamon, lemon juice, salt, and optional sweetener in a saucepan.
  9. Simmer the mixture until the apples soften and thicken slightly.
  10. Spoon the filling into the cooled cookie cups and enjoy.
