Instructions
- Preheat the oven to 350°F and spray a muffin tin with cooking spray.
- Combine the dates, milk, and vanilla extract in a food processor. Soak dates in warm water if dry.
- In a bowl, whisk together oat flour, almond flour, cinnamon, allspice, and salt.
- In another bowl, mix the date paste, coconut oil, molasses, and agave.
- Combine the wet and dry ingredients until they resemble wet sand.
- Scoop the dough into the muffin tin cups, pressing it firmly up the sides and bottom.
- Bake for 12 minutes until the edges are brown, then cool completely in the tin.
- For the filling, chop the apples into ½ inch cubes and combine with applesauce, milk, molasses, cinnamon, lemon juice, salt, and optional sweetener in a saucepan.
- Bring the mixture to a boil, then reduce heat and simmer for 6 minutes until apples soften.
- Spoon the filling into the cooled cookie cups and serve.
