Ingredients

Cookie Cups

  • 12 pieces dates, pitted
  • ¼ cup milk of choice
  • ½ teaspoon vanilla extract
  • 3 cups oat flour
  • 1 cup almond flour
  • 1 tablespoon cinnamon
  • 1 teaspoon cinnamon
  • ¼ teaspoon allspice
  • 1/8 teaspoon salt
  • 2 tablespoons coconut oil
  • 1 tablespoon molasses
  • 1 teaspoon molasses
  • 1 tablespoon agave

Apple Filling

  • 3 medium apples, chopped
  • ½ cup unsweetened applesauce
  • ¼ cup milk of choice
  • 1 tablespoon molasses
  • 1 teaspoon cinnamon
  • ½ teaspoon lemon juice
  • 1 pinch salt
  • 2 tablespoons granulated sweetener of choice (optional)

Instructions

  1. Preheat the oven to 350°F and spray a muffin tin with cooking spray.
  2. Combine the dates, milk, and vanilla extract in a food processor. Soak dates in warm water if dry.
  3. In a bowl, whisk together oat flour, almond flour, cinnamon, allspice, and salt.
  4. In another bowl, mix the date paste, coconut oil, molasses, and agave.
  5. Combine the wet and dry ingredients until they resemble wet sand.
  6. Scoop the dough into the muffin tin cups, pressing it firmly up the sides and bottom.
  7. Bake for 12 minutes until the edges are brown, then cool completely in the tin.
  8. For the filling, chop the apples into ½ inch cubes and combine with applesauce, milk, molasses, cinnamon, lemon juice, salt, and optional sweetener in a saucepan.
  9. Bring the mixture to a boil, then reduce heat and simmer for 6 minutes until apples soften.
  10. Spoon the filling into the cooled cookie cups and serve.
