Ingredients

  • 8 ounces curly kale
  • 3 tablespoons extra virgin olive oil
  • scant ¼ teaspoon fine grain sea salt
  • cup nutritional yeast

Instructions

  1. Preheat the oven to 350°F with racks in the top and bottom third.
  2. Strip the kale from the stalks and tear it into bite-sized pieces, aiming for about 5-6 ounces.
  3. In a medium bowl, combine the kale with olive oil and salt, then massage until evenly coated.
  4. Add nutritional yeast and continue mixing until the kale is fully coated with no dry spots.
  5. Arrange the kale in a single layer across two baking sheets.
  6. Bake for 15-20 minutes, tossing halfway through, until the kale is crisp and no soggy leaves remain.
