Instructions
- Preheat the oven to 350°F with racks in the top and bottom third.
- Strip the kale from the stalks and tear it into bite-sized pieces, aiming for about 5-6 ounces.
- In a medium bowl, combine the kale with olive oil and salt, then massage until evenly coated.
- Add nutritional yeast and continue mixing until the kale is fully coated with no dry spots.
- Arrange the kale in a single layer across two baking sheets.
- Bake for 15-20 minutes, tossing halfway through, until the kale is crisp and no soggy leaves remain.
