Instructions
- Preheat the oven to 250 degrees.
- Rinse and pat dry the chicken wings.
- Cut the wings at both joints, saving the wing tips for soup.
- Season the flour with salt and pepper, then dredge the wings in the flour.
- Heat the cooking oil in a deep frying pan.
- Fry the wings in batches for 4-5 minutes on each side until crispy.
- Remove the wings from the oil and drain excess oil, keeping them warm in the oven.
- In a saucepan, melt the butter and honey, then add the hot sauce and heat without boiling.
- In a food processor, blend the sour cream, milk, and half of the bleu cheese.
- Combine the blended mixture with mayonnaise and remaining bleu cheese, seasoning to taste.
- Toss the wings in the sauce until well coated and serve with blue cheese dressing and celery sticks.
