Honey Lime Buffalo Wings

Ingredients

The wings

  • 3 lbs Chicken wings
  • 2 cups flour
  • 1 cup cooking oil
  • 12 oz Cholula Lime Hot Sauce
  • 1 ½ sticks Butter
  • 4 oz Honey

The dressing

  • 8 oz Bleu Cheese
  • 1 cup sour cream or Greek Yogurt
  • 1 cup Mayonnaise
  • ¼ cup milk or buttermilk
  • ¼ teaspoon granulated onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 250 degrees.
  2. Rinse and pat dry the chicken wings.
  3. Cut the wings at both joints, saving the wing tips for soup.
  4. Season the flour with salt and pepper, then dredge the wings in the flour.
  5. Heat the cooking oil in a deep frying pan.
  6. Fry the wings in batches for 4-5 minutes on each side until crispy.
  7. Remove the wings from the oil and drain excess oil, keeping them warm in the oven.
  8. In a saucepan, melt the butter and honey, then add the hot sauce and heat without boiling.
  9. In a food processor, blend the sour cream, milk, and half of the bleu cheese.
  10. Combine the blended mixture with mayonnaise and remaining bleu cheese, seasoning to taste.
  11. Toss the wings in the sauce until well coated and serve with blue cheese dressing and celery sticks.
