Ginger Garlic Slow Cooker Pork Loin

Ingredients

The brine

  • 4 cups water
  • 2 tbsp Himalayan salt

The pork

  • 1-2 kg pork loin

The marinade

  • 6 cloves garlic, minced
  • 3 tbsp fresh ginger, grated
  • ¼ cup date paste
  • ¼ cup coconut aminos
  • ¼ cup unseasoned rice vinegar
  • 2 tbsp toasted sesame oil
  • 1 tsp fish sauce
  • 1 tsp chili pepper flakes
  • 1 tsp onion powder
  • 1 tsp Himalayan salt

Instructions

  1. Brine the pork loin in a solution of salt and water overnight.
  2. Remove the pork from the brine, pat dry, and score the top in a diamond pattern.
  3. Place the pork loin in the slow cooker.
  4. Mix garlic, ginger, date paste, coconut aminos, rice vinegar, sesame oil, fish sauce, chili pepper flakes, onion powder, and salt in a bowl.
  5. Pour the marinade over the pork and massage it into the cuts.
  6. If possible, marinate the pork in the refrigerator for a few hours or overnight.
  7. Cook the pork on high for 6 hours until fork tender.
  8. Remove the pork from the slow cooker and place it under the broiler for 5 to 10 minutes until golden brown.
  9. Strain the cooking liquid and serve the sliced pork with the juices.
