Ginger Garlic Slow Cooker Pork Loin

Instructions
- Brine the pork loin in a solution of salt and water overnight.
- Remove the pork from the brine, pat dry, and score the top in a diamond pattern.
- Place the pork loin in the slow cooker.
- Mix garlic, ginger, date paste, coconut aminos, rice vinegar, sesame oil, fish sauce, chili pepper flakes, onion powder, and salt in a bowl.
- Pour the marinade over the pork and massage it into the cuts.
- If possible, marinate the pork in the refrigerator for a few hours or overnight.
- Cook the pork on high for 6 hours until fork tender.
- Remove the pork from the slow cooker and place it under the broiler for 5 to 10 minutes until golden brown.
- Strain the cooking liquid and serve the sliced pork with the juices.
