Parmesan Cauliflower Steaks with Marinara

Ingredients

Cauliflower Steaks

  • 1 large head cauliflower
  • 2 to 3 tablespoons olive oil
  • 1 ounce finely grated Parmesan
  • to taste salt
  • to taste freshly ground black pepper

Pasta and Sauce

  • 8 ounces whole grain spaghetti
  • 25 ounces marinara sauce
  • to taste optional garnishes (more grated Parmesan, more pepper, red pepper flakes)

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
  2. Slice the cauliflower into 1-inch thick steaks and place them on the baking sheet.
  3. Drizzle olive oil over the cauliflower and toss to coat, then season with salt and pepper.
  4. Roast the cauliflower for 20 minutes, then flip and sprinkle with Parmesan cheese.
  5. Return to the oven for another 18 to 20 minutes until the Parmesan is golden and the cauliflower is tender.
  6. While the cauliflower is roasting, cook the spaghetti in salted boiling water until al dente, then drain and toss with olive oil.
  7. Warm the marinara sauce in a saucepan until simmering.
  8. Serve the spaghetti topped with marinara sauce and roasted cauliflower, garnishing as desired.
