Parmesan Cauliflower Steaks with Marinara

Pasta and Sauce

whole grain spaghetti

marinara sauce

Instructions
- Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
- Slice the cauliflower into 1-inch thick steaks and place them on the baking sheet.
- Drizzle olive oil over the cauliflower and toss to coat, then season with salt and pepper.
- Roast the cauliflower for 20 minutes, then flip and sprinkle with Parmesan cheese.
- Return to the oven for another 18 to 20 minutes until the Parmesan is golden and the cauliflower is tender.
- While the cauliflower is roasting, cook the spaghetti in salted boiling water until al dente, then drain and toss with olive oil.
- Warm the marinara sauce in a saucepan until simmering.
- Serve the spaghetti topped with marinara sauce and roasted cauliflower, garnishing as desired.
