Cauliflower Parmesan

Instructions
- Preheat the oven to 425°F (218°C) and move the oven racks to the center and upper third.
- Cut the base off the head of cauliflower to create a flat surface and slice it into 1-inch-thick steaks.
- Line a baking sheet with parchment paper and place the cauliflower steaks on it.
- In a small bowl, mix the olive oil, Italian seasoning, garlic powder, salt, and pepper, then brush the mixture over both sides of the cauliflower steaks.
- Bake the cauliflower on the center rack for 20 minutes, then flip the steaks and sprinkle with parmesan cheese.
- Bake for an additional 18-20 minutes until the parmesan is golden brown and the cauliflower is tender.
- Remove from the oven and switch to broil mode.
- Spread marinara sauce on top of the cauliflower and sprinkle with mozzarella cheese.
- Broil for 1-3 minutes until the cheese is melted and golden brown.
