Crispy Parmesan Cauliflower Steaks

Ingredients

  • 1 large cauliflower
  • 1 large egg
  • 2 tablespoons milk
  • ¼ cup all-purpose flour
  • ¾ cup panko breadcrumbs
  • ¼ cup grated parmesan
  • 1 teaspoon mustard powder
  • to taste salt
  • to taste freshly ground pepper
  • as needed oil mister or cooking spray
  • ¼ cup chopped chives or parsley
  • 1 large lemon

Instructions

  1. Preheat the oven to 400ºF and prepare a baking sheet with parchment paper.
  2. Trim the leaves from the cauliflower and cut off the bottom of the stem.
  3. Cut the cauliflower in half and then slice each half into ¾ to 1-inch thick steaks.
  4. Whisk the egg and milk together in a bowl.
  5. Place the flour on a plate and combine the panko, parmesan, mustard powder, salt, and pepper on another plate.
  6. Dredge the cauliflower steaks in flour, dip in the egg mixture, and then coat with the panko mixture.
  7. Arrange the coated steaks on the baking sheet and spray with oil.
  8. Bake for 15 minutes, flip, spray with more oil, and bake for an additional 15-20 minutes until golden brown.
  9. Serve with chopped herbs and a squeeze of lemon juice.
