Crispy Parmesan Cauliflower Steaks

Instructions
- Preheat the oven to 400ºF and prepare a baking sheet with parchment paper.
- Trim the leaves from the cauliflower and cut off the bottom of the stem.
- Cut the cauliflower in half and then slice each half into ¾ to 1-inch thick steaks.
- Whisk the egg and milk together in a bowl.
- Place the flour on a plate and combine the panko, parmesan, mustard powder, salt, and pepper on another plate.
- Dredge the cauliflower steaks in flour, dip in the egg mixture, and then coat with the panko mixture.
- Arrange the coated steaks on the baking sheet and spray with oil.
- Bake for 15 minutes, flip, spray with more oil, and bake for an additional 15-20 minutes until golden brown.
- Serve with chopped herbs and a squeeze of lemon juice.
