Ingredients

The brownies

  • 1 cup raw walnut halves
  • 6 tablespoons unsalted butter
  • 1 cup mashed ripe banana
  • cup honey
  • cup light or dark brown sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • ¾ cup all-purpose flour
  • ¾ cup white whole wheat flour
  • ½ teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon kosher salt

The frosting

  • 6 tablespoons unsalted butter
  • 1 ½ cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 to 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 350°F and line an 8x8-inch baking pan with parchment paper.
  2. Toast the walnuts in the oven for 8 to 10 minutes, then chop them.
  3. In a large bowl, mash the banana.
  4. Brown the butter in a saucepan over medium-low heat, then add it to the mashed banana.
  5. Whisk in honey and brown sugar until smooth, then cool slightly.
  6. Add the egg and vanilla to the banana mixture and mix well.
  7. In a separate bowl, combine the dry ingredients and then add them to the wet mixture, folding until just combined.
  8. Fold in the chopped walnuts and pour the batter into the prepared pan.
  9. Bake for 22 to 25 minutes until lightly browned and a toothpick comes out clean.
  10. Let cool in the pan before frosting.
  11. To make the frosting, brown the butter and mix in powdered sugar and cream until smooth.
  12. Frost the cooled brownies and enjoy.
