Ingredients

The lobster salad

  • 16 ounces lobster meat (body and claws)
  • 4 tablespoons mayonnaise
  • 1 tablespoon freshly squeezed lemon juice
  • ΒΌ cup celery stalks (finely chopped)
  • 1 tablespoon Italian parsley (finely chopped)
  • 1 teaspoon Old Bay seasoning
  • to taste salt
  • to taste black pepper

The buns

  • 4 New England style top split hot dog rolls

Instructions

  1. Thaw the lobster overnight in the refrigerator and squeeze out excess water.
  2. Place the lobster meat in a large bowl.
  3. In a medium bowl, whisk together mayonnaise, lemon juice, salt, black pepper, and Old Bay seasoning.
  4. Add chopped celery and Italian parsley to the lobster meat and mix.
  5. Combine the dressing with the lobster mixture and mix well.
  6. Refrigerate for at least two hours to chill and allow flavors to meld.
  7. Serve the lobster salad on the split hot dog buns with lemon wedges and your choice of side.
