Ingredients

The lobster filling

  • 1 pound frozen lobster meat, thawed, or cooked meat from two 1 ½ - 2 pound live lobsters
  • ¼ cup minced celery
  • ¼ cup mayonnaise
  • 1 tablespoon minced chives
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

The buns

  • 4 pieces split-top brioche, New England style hot dog buns, with sides trimmed off

The butter

  • 4 tablespoons butter, divided

Instructions

  1. Rinse the lobster meat and check for any shells, then drain thoroughly.
  2. Chop or tear the lobster into large chunks and set aside.
  3. In a bowl, mix together the celery, mayonnaise, chives, lemon juice, lemon zest, kosher salt, and black pepper.
  4. In a skillet, melt 2 tablespoons of butter over medium heat and add the lobster, cooking for about 2 minutes until warmed through.
  5. Use a slotted spoon to transfer the lobster to the mayonnaise mixture and toss to coat.
  6. Discard excess butter and wipe out the skillet.
  7. Melt the remaining butter in the skillet and toast the buns on their cut sides for about 2 minutes until golden.
  8. Fill each bun with an equal amount of the lobster mixture and garnish with extra chives if desired.
