Lobster Rolls

The lobster filling

frozen lobster meat, thawed, or cooked meat from two 1 ½ - 2 pound live lobsters

The buns

split-top brioche, New England style hot dog buns, with sides trimmed off
The butter

tablespoons
butter, divided
Instructions
- Rinse the lobster meat and check for any shells, then drain thoroughly.
- Chop or tear the lobster into large chunks and set aside.
- In a bowl, mix together the celery, mayonnaise, chives, lemon juice, lemon zest, kosher salt, and black pepper.
- In a skillet, melt 2 tablespoons of butter over medium heat and add the lobster, cooking for about 2 minutes until warmed through.
- Use a slotted spoon to transfer the lobster to the mayonnaise mixture and toss to coat.
- Discard excess butter and wipe out the skillet.
- Melt the remaining butter in the skillet and toast the buns on their cut sides for about 2 minutes until golden.
- Fill each bun with an equal amount of the lobster mixture and garnish with extra chives if desired.
