Ingredients

The filling

  • ¼ cup mayonnaise
  • 1 tablespoon green onion
  • 1 tablespoon fresh lemon juice
  • 2 cups cooked lobster meat, cut into ¾-inch pieces
  • 1 cup celery, chopped (about 2 stalks)
  • ¼ teaspoon salt
  • teaspoon black pepper

The buns

  • 4 pieces split-top hot dog buns
  • 2 tablespoons butter, softened

For serving

  • to taste lemon wedges

Instructions

  1. In a bowl, whisk together mayonnaise, green onion, lemon juice, salt, and pepper.
  2. Fold in the lobster and celery, then cover and chill until ready to serve.
  3. Spread butter on the outside of the buns.
  4. Toast the buns in a skillet over medium-high heat until golden brown, about 2 to 3 minutes per side.
  5. Fill each toasted bun with about ½ cup of the lobster filling.
  6. Serve with lemon wedges.
