Seafood Rolls

Ingredients

The seafood

  • 1 pound lobster tail
  • 1 pound shrimp, peeled and deveined

The herb butter sauce

  • 6 tablespoons unsalted butter
  • 2 tablespoons minced fresh Italian parsley
  • 1 tablespoon minced chives
  • ½ tablespoon minced fresh tarragon
  • tablespoons lemon juice
  • 1 teaspoon celery salt
  • to taste freshly cracked ground pepper

The buns

  • 4 brioche hot dog buns
  • 1 tablespoon unsalted butter, at room temperature
  • 2 tablespoons mayonnaise

Instructions

  1. Boil water in a large pot and add salt generously.
  2. Cook the lobster tail for 7-8 minutes until bright red, adding shrimp in the last 2 minutes until opaque.
  3. Remove seafood from water and let cool before chopping into bite-sized pieces.
  4. Melt butter in a skillet, then remove from heat and stir in herbs, lemon juice, celery salt, and season with salt and pepper.
  5. Combine the seafood with the herb butter mixture in a bowl.
  6. Butter the outside of the buns and toast them in a skillet until golden brown.
  7. Spread mayonnaise on the inside of the buns and fill with the seafood mixture, adding black pepper to taste.
