Ingredients

The apples

  • 2 medium peeled chopped apples (about 2 cups or 240g)
  • 2 Tablespoons pure maple syrup (or brown sugar)
  • teaspoon ground cinnamon

The blondies

  • 1 cup unsalted butter (cut into pieces)
  • 2⅓ cups all-purpose flour (spooned & leveled)
  • teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1⅔ cups packed light or dark brown sugar
  • 2 large eggs (at room temperature)
  • teaspoons pure vanilla extract

The brown butter icing

  • ¼ cup unsalted butter
  • cups confectioners' sugar
  • 2 Tablespoons milk
  • ¼ teaspoon pure vanilla extract

Instructions

  1. Brown the butter and set aside.
  2. Cook the chopped apples with maple syrup and cinnamon until slightly softened.
  3. Preheat the oven to 350°F (177°C) and prepare a 9x13-inch baking pan.
  4. Whisk the dry ingredients together in a bowl.
  5. In another bowl, mix the wet ingredients and then combine with the dry ingredients.
  6. Fold in the cooked apples and spread the batter into the prepared pan.
  7. Bake for about 35 minutes until lightly browned and a toothpick comes out mostly clean.
  8. Prepare the icing by mixing the remaining brown butter with confectioners' sugar, milk, and vanilla.
  9. Drizzle the icing over the cooled blondies and cut into squares.
