Ingredients

Shortbread Crust

  • 1 cup unsalted butter, melted
  • ½ cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon salt
  • 2 cups + 2 Tablespoons all-purpose flour

Lemon Filling

  • 2 cups granulated sugar
  • 6 Tablespoons all-purpose flour
  • 6 large eggs
  • 1 cup fresh lemon juice
  • 2 teaspoons fresh lemon zest (optional)
  • to taste confectioners’ sugar for dusting (optional)

Instructions

  1. Preheat the oven and prepare a baking pan with parchment paper.
  2. Mix the crust ingredients and press into the pan, then bake until lightly browned.
  3. Poke holes in the warm crust to help the filling adhere.
  4. Sift the sugar and flour for the filling, then whisk in the eggs, lemon juice, and zest.
  5. Pour the filling over the crust and bake until set.
  6. Cool the bars at room temperature, then refrigerate until chilled.
  7. Lift the bars out using the parchment paper, dust with sugar, and cut into squares.
