Epic Black Bean Burger

Ingredients

  • 2 cans black beans (14-ounce each, drained, rinsed, and patted dry)
  • 1 tablespoon avocado oil
  • 1 cup yellow onion (finely chopped)
  • 1 jalapeño seeded and chopped
  • 2 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 teaspoon salt
  • ½ cup breadcrumbs
  • ½ cup walnuts
  • 2 cups cotija cheese or feta
  • 2 large eggs
  • 1 tablespoon mayonnaise
  • 1 tablespoon barbecue sauce

Instructions

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. Spread the black beans evenly on the baking sheet and bake for 15 minutes until slightly dried.
  3. If cooking in the oven, increase the temperature to 375°F.
  4. Blend the walnuts in a food processor until a semi-fine texture is achieved.
  5. In a skillet, sauté the avocado oil, onion, jalapeños, and garlic over medium heat for about 5 minutes until soft.
  6. Transfer the sautéed mixture to a bowl and blot out excess oil with paper towels.
  7. Add all ingredients except the black beans to the food processor with the walnuts and blend until just combined.
  8. Add the baked beans and blend again, leaving some chunks for texture.
  9. Form the mixture into patties, about ⅓ cup each, and place them on a parchment-lined baking sheet.
  10. Bake for 10 minutes, flip, and bake for another 10 minutes, or cook in a greased skillet for 10 minutes on each side.
  11. Serve on a brioche bun with desired toppings.
