Instructions
- Prepare the chipotle aioli by mixing all ingredients together and set aside.
- Grill the turkey patties for 5-6 minutes on each side until the internal temperature reaches 165°F, adding cheese just before they finish cooking.
- Brush the brioche buns with melted butter and grill them until golden brown.
- Cook the eggs to your preference (sunny side up, over easy, or over medium) on a greased skillet.
- Assemble the sandwich starting with chipotle aioli on the bottom bun, followed by arugula, avocado, the cheese-topped turkey patty, and the cooked egg. Top with more aioli and the top bun.
