Ingredients

The dressing

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon honey
  • a pinch salt
  • a pinch freshly ground black pepper

The salad

  • 2 cups chopped cooked skinless boneless chicken breast
  • 2 stalks celery, thinly sliced
  • ΒΌ cup chopped fresh parsley leaves
  • 1 cup finely shredded red cabbage
  • 1 large pear, halved, cored, and sliced
  • 3 ounces Gorgonzola cheese, crumbled
  • 8 leaves butter lettuce

Instructions

  1. Whisk together the olive oil, apple cider vinegar, honey, salt, and pepper in a large bowl.
  2. Add the chicken, celery, parsley, cabbage, pear, and Gorgonzola to the bowl and toss to coat.
  3. Cover the bowl and refrigerate for 30 minutes.
  4. To serve, place 2 butter lettuce leaves on each of 4 plates and divide the salad among the lettuce cups.
