Ingredients

The meatballs

  • 2 pounds ground meat (beef, pork, turkey or a combo)
  • 1 cup panko or regular bread crumbs
  • ¼ cup chopped fresh cilantro
  • 2 pieces green onions (white and green parts finely chopped)
  • 2 large eggs
  • 2 tablespoons soy sauce (low-sodium)
  • 1 tablespoon finely minced ginger or ginger paste
  • 3 cloves garlic (finely minced or ½ teaspoon garlic powder)
  • 1 teaspoon dried basil
  • 1 teaspoon zest from lime (about 1 teaspoon)
  • 1 pinch crushed red pepper (optional)

The sauce

  • cup soy sauce (low-sodium)
  • cup sweet chili sauce
  • ¼ cup fresh lime juice (from 2-3 limes)
  • 2 tablespoons brown sugar

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with aluminum foil and cooking spray.
  2. In a large bowl, combine ground meat with all meatball ingredients and mix well.
  3. Roll the mixture into meatballs and place them on the baking sheet.
  4. Bake for 20-25 minutes until cooked through, checking temperature reaches 165°F.
  5. While meatballs are baking, whisk together all sauce ingredients and heat until simmering.
  6. Remove meatballs from oven, drizzle with sauce, and garnish with green onions and sesame seeds if desired.
  7. Serve meatballs on their own or over rice or quinoa.
