Ingredients

Oven Method

  • ½ cup granulated sugar

  • 1 tablespoon Bourbon or Rum
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 2 cups whole pecans
  • ½ - 1 teaspoon cayenne pepper

Stovetop Method

  • 2 cups pecan halves
  • cup water
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cayenne powder
  • 1 teaspoon Creole Seasoning

Instructions

  1. Preheat the oven to 300°F (149°C) and prepare a baking sheet.
  2. Whisk egg white with bourbon and vanilla until frothy.
  3. Combine sugar, cayenne pepper, cinnamon, and nutmeg in a separate bowl.
  4. Coat pecans with the egg white mixture, then with the sugar mixture.
  5. Spread the pecans on the baking sheet and bake for 30-35 minutes, stirring every 10 minutes.
  6. Cool on the baking sheet before storing.
  7. For the stovetop method, roast pecans in the oven, then boil water with sugar and spices.
  8. Add pecans to the boiling mixture and stir until sugar crystallizes.
  9. Spread on a tray to cool and serve.
