Instructions
- Preheat the oven to 300°F (149°C) and prepare a baking sheet.
- Whisk egg white with bourbon and vanilla until frothy.
- Combine sugar, cayenne pepper, cinnamon, and nutmeg in a separate bowl.
- Coat pecans with the egg white mixture, then with the sugar mixture.
- Spread the pecans on the baking sheet and bake for 30-35 minutes, stirring every 10 minutes.
- Cool on the baking sheet before storing.
- For the stovetop method, roast pecans in the oven, then boil water with sugar and spices.
- Add pecans to the boiling mixture and stir until sugar crystallizes.
- Spread on a tray to cool and serve.
