Instructions
- Smash one whole onion and add it to a saucepan with a bottle of beer, simmer for at least 10 minutes.
- Prepare the grill for indirect heat, placing the brats on the cooler side.
- Slow cook the brats for 20 to 40 minutes, turning occasionally without piercing the skin.
- Once the brats start to wrinkle, drop them into the saucepan with the beer and onion mixture for a few seconds to rehydrate.
- For peppers and onions, cut them up and place them in a foil pouch with some of the beer mixture, then place it on the grill.
- After cooking, you can use the beer mixture with cheese and milk to create a cheese soup.
