Instructions
- Prepare the marinade by whisking together lime juice, salt, cumin, coriander, garlic, vinegar, olive oil, and green onions in a bowl.
- Add the skirt steak to the marinade, ensuring it's well coated, and refrigerate for at least 4 hours, preferably overnight.
- Preheat the grill on high for about 10 minutes.
- Remove the steak from the marinade, pat it dry, and grease the grill grates with oil.
- Grill the steak for 3-4 minutes on each side for medium-rare, or 4-5 minutes for medium.
- Let the steak rest for 10 minutes before slicing against the grain.
- Assemble the tacos by placing slices of carne asada in tortillas and topping with onion, cilantro, guacamole, and other desired toppings.
