Carne Asada Tacos

Ingredients

Marinade

  • ½ cup lime juice
  • ¼ cup orange juice
  • 1 tablespoon kosher salt
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons ground paprika
  • 4 cloves garlic
  • 2 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • 2 stalks green onions
  • 2 pounds skirt steak

Tacos

  • ¼ cup white onion
  • 1 bunch cilantro
  • to taste flour tortillas
  • to taste guacamole
  • to taste limes

Instructions

  1. Prepare the marinade by whisking together lime juice, salt, cumin, coriander, garlic, vinegar, olive oil, and green onions in a bowl.
  2. Add the skirt steak to the marinade, ensuring it's well coated, and refrigerate for at least 4 hours, preferably overnight.
  3. Preheat the grill on high for about 10 minutes.
  4. Remove the steak from the marinade, pat it dry, and grease the grill grates with oil.
  5. Grill the steak for 3-4 minutes on each side for medium-rare, or 4-5 minutes for medium.
  6. Let the steak rest for 10 minutes before slicing against the grain.
  7. Assemble the tacos by placing slices of carne asada in tortillas and topping with onion, cilantro, guacamole, and other desired toppings.
