Ingredients

The marinade

  • ½ lime lime juice

  • ¼ cup pineapple juice or orange juice
  • ½ teaspoon oregano
  • ½ teaspoon cumin
  • ½ teaspoon white pepper
  • 1 teaspoon onion powder

The meat

  • 1-1½ pounds skirt steak
  • 2-3 tablespoons cilantro

Instructions

  1. Combine soy sauce, garlic, pineapple juice, oregano, cumin, white pepper, and onion powder in a small bowl.
  2. Place skirt steak in a large bowl or sealable bag, add cilantro, and mix well.
  3. Marinate for at least 2 hours or up to 24 hours for best flavor.
  4. Preheat grill to medium-high heat.
  5. Drain the skirt steak and pat dry with paper towels, then oil the grill grate.
  6. Grill the skirt steak for 3-4 minutes per side until a deep brown crust forms.
  7. Remove from heat, let rest for 10 minutes, then slice against the grain and serve.
