Ingredients

The marinade

  • ¼ cup olive oil
  • ¼ cup fresh orange juice
  • 1 tsp lime zest
  • ¼ cup fresh lime juice
  • 1 - 3 pieces canned chipotle peppers, minced
  • 1 Tbsp adobo sauce from can of chipotle peppers
  • 1 Tbsp chili powder
  • 1 Tbsp ancho chili powder
  • Tbsp minced fresh garlic
  • ½ cup chopped cilantro
  • tsp ground cumin
  • ½ tsp ground coriander
  • tsp granulated sugar
  • to taste salt
  • to taste freshly ground black pepper

The meat

  • 2 lbs flank steak or skirt steak

Instructions

  1. Whisk together all marinade ingredients in a mixing bowl.
  2. Season the marinade with salt and pepper to taste.
  3. Pour half of the marinade into a baking dish and place the steak on top, covering it with the remaining marinade.
  4. Cover the dish with plastic wrap and refrigerate for 2 to 8 hours.
  5. Preheat a gas grill to about 450 degrees Fahrenheit.
  6. Grill the steak until it reaches the desired doneness, approximately 6 to 14 minutes depending on thickness.
  7. Let the steak rest before slicing thinly.
